- 1 small onion
- 1/2 stick margarine
- 2 eggs
- 1 can whole kernel corn – undrained
- 1 can cream corn
- 1 box corn bread muffin mix (8 1/2 oz)
- 1 cup shredded cheddar cheese
- In a casserole dish melt margarine over chopped onion for two minutes in microwave.
- Stir in 2 eggs, corn and corn bread muffin mix.
- Fold in cheddar cheese.
- Bake uncovered in a 350 degree oven for one hour.
